One of Philadelphia’s most acclaimed sushi chefs, Chef Hiroyuki “Zama” Tanaka’s vibrant Japanese style of cooking recently received a three-bell review from The Philadelphia Inquirer for his Rittenhouse Square flagship sushi bar, Zama. Zama’s approach can be credited from years of experience at some of Philadelphia’s Asian landmarks including POD, Morimoto and Genji. Chef Tanaka partnered with LDV Hospitality and Menin Hotels to take his rich culinary traditions to South Beach to create a modern twist on Japanese cultures.
